
So here it is finally! It was very trial and error with this because it was my first time doing some of the things this recipe required, mainly making the compote and the Italian meringue which was a very different way of making it than I had done before. I made the compote and overheated it the first time so had to scrape it and make it again. When it overheated it turned into a very sticky and then hard mixture. Boo! The second time it came out correctly. I tried making the Italian meringue like the recipe asked but after two tries I could not get it right. I'm not sure what I was doing wrong so I decided to just stick to a basic meringue recipe and that turned out just fine! The pie is beautiful and the lime curd tastes great!
+ I used a store bought pie crust, much too long to make one from scratch
+ Making the compote which comprised of a cup of fruity red wine and sugar
+ Blackberries coated with the compote go at the bottom of the pie
+ The lime curd spread over the berry compote
+ Making the simple meringue

I'm so happy that I've started baking again. It passes the time and helps me not think of things I shouldn't be thinking about. And then I have something sweet to eat afterwards. Here is the recipe again for those who want to try it out. Be prepared to spend a lot of time in the kitchen!

Ooooh that looks so yummy! I sold my oven in Shanghai, and I'm not sure if I'll have one until I get home this year. P.S. I have a super easy fail-proof pie crust recipe if you want it! It never fails to impress my pie-loving friends.
